Aw Yeah
I forgot to plan dinner today, and looked up from my computer at 6pm. Rather than panic, I sent the kids out of the kitchen and pulled some shredded cabbage, a sweet potato, a half an onion, a couple of chicken sausages (already cooked) and a couple of eggs out of the fridge. I shredded the sweet potato and chopped everything else up and dumped it all in a bowl, coated it with flour and cracked in the eggs, and mixed it all up. I added some frozen corn kernels and a couple handfuls of shredded cheese, and then fried like pancakes.
And then I served it for dinner. And my son, who won't eat anything green unless it is an avocado or broccoli, bought my claim that it was just like a hash brown, but with sweet potato. And he ate it, topped with a little soy sauce. Or a lot of soy sauce. Whatever. He ate it! Everyone ate it!

My kids would have had to make do with Mac'N'Cheese. Or watermelon. Or something.
