Broccoli and bacon baked potatoes

099 Well, I’ve been swinging for the fences over here, but I’ve been mostly hitting foul balls, if I connect at all.  The Boy has been getting frustrated, and I’ve been getting frustrated, and we’ve been eating a lot of mediocre soup.  What’s a mom to do?

After a bit of discussion, I decided to take it back to familiar foods, and incorporate a lot of things that seem to make everything go down easier.  Namely – butter, bacon and cheese.

After checking the pantry, and getting a gander of Elise Bauer’s gorgeous twice-baked potatoes recipe, I thought we might have a successful night in the kitchen.

Besides, there are few things more enjoyable that a baked potato on a chilly night, especially if you take the proper precautions so your potatoes don’t turn terrorist.  Confused?  Read it and weep, my friends.

With The Boy on board to help assemble, and a big ole bag of russets in the pantry, we assembled our ingredients and got ready to make some twice-baked potatoes stuffed with broccoli, bacon and cheese.

Here’s what we started with:


  • Broccoli florets, which I then cut into mini florets, which The Boy calls “Tree Stars”
  • Shredded cheese blend
  • 6 russet potatoes
  • One whole head of garlic
  • Milk and Butter (in the photo, but I didn’t end up using them.  More on that below.)
  • Not pictured, but used – applewood smoked uncured bacon.  Mmmm.

First things first – I drizzled some olive oil on the entire head of garlic, after setting it on a square of foil.


Then I twisted it up, and totally blew my chance to make it into a swan or something.


Into a 350 degree oven with the six scrubbed and poked at least four times each with a fork potatoes.  The whole poking may be an optional step, but I’m not taking chances.  I set the time for one hour and fifteen minutes.

The plan was to use a few strips, and save the rest for another meal, but then I realized that if they didn’t go in the potatoes, they would be eaten by my ravenous family, who come running every single time they smell bacon.


So, I chopped ’em all up, and set them aside while I quickly microwave-steamed the broccoli.


After that was done (like 1 minute, with about a tablespoon of water, covered with plastic wrap) I yanked the potatoes and garlic out of the oven.


I broke the cloves off of the head, and spent the next 5 minutes gloriously wallowing in roasted garlic.  I squeezed the cloves right out of their papery shells, and put them into the bowl where the scooped out potatoes were going to be joining them in a minute.

The Boy watched impatiently as I halved and then scooped the guts out of each potato, leaving a slight wall of intact potato around the skin.


The Boy then took over with the masher, mixing the potato and garlic together before adding in the broccoli and bacon.  I normally would have added butter and milk before he added the broccoli and bacon, but it was already pretty creamy, and the addition of the cheese added some sticking power.


And yes, that is chocolate on his face.  Whoops.  His hands were clean, though.


Here we are stuffing the potatoes with their enhanced guts, and getting ready to pop them back in the oven to reheat and melt the cheese.


Oh man.  These turned out so, so good.

I don’t have a photo of the kids going face down in their potatoes, abandoning silverware and all humanity in an effort to inhale these directly into their greedy little gullets.   The broccoli was eaten with no qualms by any of them.

    I’ve been meaning to make twice baked potatoes but never seem to remember until my potatoes are gone.

    There are certain things my youngest isn’t keen on but I find that having her help me in the kitchen improves her attitude towards the food item. Something I notice that gets my kids excited about their food is when I put it in pretty platters and set it on the table for them to serve. It’s true about eating with your eyes first.
